Pumpkin Muffins

Easy, Nutritious, & Delicious!

I have made these muffins for my kids now for almost 6 years. I don't know if it's because they grew up eating them but they absolutely love them. And I feel great about the ingredients they are eating! After making this batch I had four left over and placed them in a ziplock bag on the counter. I realized by dinner the bag was emptied. That meant between playing throughout the day they came in and ate them all. Again, no biggie because it's good fulfilling ingredients. Win win! 

Ingredients: 

  • 1 Cup All Purpose Flour
  • 1 Cup Oats (I use quick oats)
  • 1/2 Cup Packed Brown Sugar (light)
  • 1 Teaspoon Baking Powder
  • 1/2 Teaspoon Baking Soda
  • 1 1/4 Cup Pumpkin (almost one full can)
  • 1 Egg
  • 1 Tablespoon Oil (Canola or Olive Oil)
  • 1/2 Teaspoon Cinnamon
  • 1/4 to 1/2 Cup Raisins (my kids love raisins so we always add more)

Directions:

Preheat oven to 375. Mix all ingredients together. Grease muffin pan for approximately 10 muffins. Bake for 20-22 minutes. Top with pumpkin seeds (optional - which we never do simply because it's not an ingredient I keep all of the time).
