The Blue Apron Experience

By Jennifer Ercoli - Publisher Macaroni Kid Lafayette May 2, 2018

This past week I have had the pleasure of trying new foods with my kids. To many mothers this notion sounds absurd because how often is trying new foods with kids fun? I have three children and the one who is adventurous in trying new foods is not the one who likes cooking with me. Thank to Blue Apron I was able to get my pickier eaters to try new foods simply because they helped make it.

The process is incredibly simple and begins with ordering on www.blueapron.com. You are given the option of ordering meals for 2 people or a family of 4. It is worth noting that I have a family 5. My kids are 5, 8, and 9. The 4 person meal works great for us as the kids do not eat as much as we do. Pricing is between $7.99 - $10.99 per meal. Cheaper than eating out and you are making it yourself and creating memories when you let the kids help. Signing up and ordering on the website took no more than 10 minutes and my box of food was delivered cold and perfectly packages in 5 days. We ordered the box with 4 meals which included, Sweet Chili and Hoisen Glazed Chicken Thighs, Florentine Pork Chops & Salsa Verde, Sheet Pan Pesto Salmon, and Cheesy Chicken Pizza.

When we first opened the box and viewed the recipes I could see the uncertainty on two of my children and my husband! First up we tried the Sweet Chili and Hoisen Glazed Chicken Thighs and I have to say it was amazing. The dish was so full of flavor and the tasty thighs were served on a bed of lemon rice, cabbage, carrots, celery, and scallions. The kids loved banging the lemongrass to extract the oils and I also let them cut the cabbage, celery, and scallions as well as season and cook the meat. No one in my home thought they liked cabbage (aside from myself) until we served this dish. Everyone admitted it was good. Complete shock to myself! The recipe took about an hour to cook. Without the kids helping it may have saved about 15 minutes but so worth it since they tried new foods. The only ingredients not provided by Blue Apron was olive oil, salt, and pepper.

Although cooking the Cheesy Pizza and Pork Florentine were fun and delicious they are not as notable as cooking the Pesto Salmon. Why you ask? Because my family thinks they do not like fish. I was the most worried about this dish thinking it would bomb. The last time my oldest ate tilapia it did not stay down and he managed to convince the rest of the kids fish is just not good. That was until we made Blue Apron's Pesto Salmon! I want to mention again that my husband was apprehensive. Not only was it a fish meal but it was green on top of that. This was actually the easiest dish to make and it was served with roasted broccoli, sweet potatoes and radishes. I will be fully honest and admit the kids still wouldn't eat the broccoli. But you know what? They ate all of the fish, and that includes my husband! I cannot express how grateful I am that I can begin buying and cooking fish again. And I will always thank Blue Apron for that.
