BLT Pasta Salad

Who doesn't love the flavor combination of bacon, lettuce and tomato - especially in warmer weather? This BLT Pasta Salad combines all the flavors of the classic sandwich in a option that can be served as a side dish at a cookout or a light dinner. 

Ingredients
  • 2 cups cooked elbow macaroni
  • 1 pkg of Hormel Bacon Bits*
  • 2 field tomatoes
  • 1/2-3/4 cup shredded lettuce* (I used iceberg lettuce)
  • 1 cup shredded cheese*
  • 1/2 cup mayonnaise
  • 2 tbsp of lemon juice
  • 1 tsp sugar
  • Black Pepper*
  • Chili powder*
Directions
  1. Cook elbow macaroni according to package directions and let cool.
  2. Dice tomatoes and set aside.
  3. Shred cheese and set aside.
  4. Shred lettuce and set aside.
  5. In a separate bowl mix together the mayonnaise, lemon juice, black pepper, sugar and chili powder.
  6. Once pasta has cooled, dump into large bowl. Add the lettuce, tomatoes, bacon bits and cheese.
  7. Add the mayonnaise dressing mixture and mix ingredients until well combined.
  8. Place in fridge until ready to serve.
* The original recipe called for 4 strips of bacon to be cooked and crumbled, but I was short on time which is why I substituted the Hormel Bacon Bits. Make sure to get the package that says REAL bacon bits and not the simulated ones. Pre-shredded cheese and lettuce can also be used to save on time. In regards to the black pepper and chili powder, add to suit your taste. I personally don't always measuring my seasonings, and I add them according to the taste of my family. The original recipes called for 3 tablespoons of chili sauce, which can be used in place of the chili powder.
